Dishes prepared by jazz singer Loretta Ables on "Hawaii's Kitchen" this week. The show airs at 5:30 p.m. Sunday on KHON/Fox.

Tortillas

3 cups flour
2 tablespoons baking powder
1 teaspoon salt
3/4 cup butter-flavored Crisco
1 cup hot tap water

Mix flour, baking powder, salt and Crisco in a large bowl. Add hot water a little at a time to help blend ingredients. Roll dough into a large ball and knead until smooth and pliable. Remove from bowl and continue kneading on counter until completely blended. Form dough into golf-ball-size balls, place in clean bowl and cover with a towel for about 1 hour.

Coat rolling pin and surface in flour. Roll balls of dough, turning occasionally, to form discs.

Place each tortilla on medium-hot griddle and flip when bubbles start to form -- about 1 minute on each side. Cover tortillas with towel to keep warm as you finish the batch.

Salsa Fresco

4 medium tomatoes, diced
1 medium onion, diced
1/2 bunch cilantro, leaves only, chopped
1 clove garlic, finely chopped
Salt, pepper, finely chopped fresh jalapeno, to taste

Combine tomatoes and onion in a bowl. Stir in cilantro and garlic. Stir until evenly blended. Add salt and pepper. Cover and refrigerate at least 30 minutes.

Chicken Fajitas

2 limes
3 boneless, skinless chicken breasts, sliced
2 teaspoons sugar
2 teaspoons dried oregano
1/2 teaspoon cayenne pepper
1 teaspoon ground cinnamon
2 teaspoons vegetable oil
3 bell peppers (1 each red, green and yellow)
1 medium onion

Zest limes and grate the zest. Set aside both zest and limes.

Place chicken in medium bowl with sugar, oregano, cayenne, cinnamon and lime zest. Squeeze lime juice over chicken. Mix and refrigerate at least 15 minutes.

Heat oil in skillet. Add chicken mixture and cook 5 minutes, stirring constantly. When chicken is cooked through, add bell peppers and onions and stir until just cooked.

Spoon mixture into warm tortillas and garnish with guacamole, salsa and sour cream, if desired. Roll up tortillas.
