'Mousewood' cookbook
author to share advice

Mollie Katzen, author of the vegetarian classic "Moosewood Cookbook," headlines the list of food writers appearing at the Maui Writers Conference on Labor Day weekend.

More than 4 million copies of Katzen's cookbooks have sold since she self-published her first in 1974. Along with "Moosewood," Katzen has written "The Enchanted Broccoli Forest," "Still Life With Menu," "Vegetable Heaven" and the children's cookbooks, "Pretend Soup" and "Honest Pretzels."

Katzen will speak at the conference and join a panel of food writers including chef Beverly Gannon ("The Haliimaile Cookbook"), Ui Goldsberry (the Sam Choy cookbooks), Diana von Welanentz Wentworth ("Chicken Soup for the Soul Cookbook") and Joe Ortiz ("The Village Baker").

The panel will hear "pitches" from the audience and offer advice on developing published cookbooks.

Kapalua champion

Executive chef Stephan Marshall of the Ritz-Carlton Kapalua won the popular vote at the Kapalua Wine & Food Festival for his Baked Opakapaka with Seared Scallop on Lemon Grass Truffle Emulsion.

Fourteen Maui chefs competed in Sunday's seafood cooking competition, with the winner selected by voted of more than 800 festival-goers.

Marshall's opakapaka dish was served on a bed mashed potatoes flavored with leeks.

Special events

Hawaiian Dinner Buffet: Na Leo Pilimehana kicks off a dinner concert series at Koolau Golf Club, Friday in the Grand Ballroom. Dinner is at 6 p.m.; concert at 8 p.m. The Hawaiian food buffet includes Pulehu short ribs, squid luau, kalua pig and cabbage, lomi salmon and several poke dishes. Cooking classes

Sheraton salad: Exectutive Sous Chef John Hightower of the Sheraton Princess Kaiulani prepares Volcano Spiced Chicken Salad, noon to 1 p.m. Friday, at the Williams Sonoma store in Ala Moana Center. The demonstration is part of the Sheraton Hotel's free cooking series at the upscale kitchen store.

Keiki Cooks: Chef Sam Choy teaches a barbecue class for kids, "Help Dad Out on the Grill," 9 to 11 a.m. Saturday, at his Diamond Head restaurant. The class is part of the "Keiki Cooks" series sponsored by Kapiolani Community College. Cost is $25. Call 734-9441.

Greens from the Garden: Greens aren't just for salads. Learn to use them in a variety of vegan dishes such as Greens, Beans and Pasta, 9:30 to 11:45 a.m. Saturday, Lyon Arboretum. Cost is $22; $18 for arboretum members. Call 988-0456.

Salads and sweets: The Japanese Cultural Center of Hawaii offers two cooking classes taught by Fumiko Yokokawa next week. Learn salad- and dressing-making, July 25; and scratch cookie- and cake-baking, July 30. Both classes take place at 10 a.m. and cost is $25 each. Call 734-9457.
