12 ounce block fresh ahi
1/4 cup shichimi (Japanese seven-spice)
1 small daikon, finely shredded
1 small carrot, finely shredded
>> Sauce:
1 bay leaf
1 shallot, sliced
1 cup white wine
6 whole peppercorns

Soy sauce to taste

For sauce: Combine bay leaf, shallot, wine, peppercorns and sugar; cook on medium heat until mixture is reduced to 2 tablespoons. Add cream and continue to cook until liquid is reduced to 1/3. Remove from heat and whisk in butter; add lilikoi juice and soy sauce.
