Delicacies in chocolate

Pastry chef David Brown of the Hilton Waikoloa Village is known for his large-scale sculptures in chocolate. But those are for looking at, not eating, so now he is offering a mini-sculpture designed to be dessert.

His Carnival Mask of Venice, inspired by the classic Venetian mask, features a white-chocolate "face" over a little round "body" of flourless chocolate cake.

It is available at Donatoni's Italian Restaurant in the resort.

Also new to the dessert menu is a Lemon Mascarpone Cheesecake topped with a tiny mouse made of marzipan, with ears of almond slivers and a curled chocolate tail.

The new desserts accompany a new menu from chef Vincenzo Pecoraro.

Cooking class: Learn to prepare a meal with tomato highlights, then eat the results, 6 p.m. Tuesday, 3660 on the Rise. Make Pan-Seared Mahimahi with Tomato Confit and Beef Tenderloin with Tomato Concassée. Cost is $45, including wine. Call 737-1177.

Next Generation Dinner: Sous Chef Wade Ueoka presents a four-course meal showcasing lobster and foie gras, Thursday, Alan Wong's Restaurant. The menu includes Pork Hash Foie Gras Won Ton Soup, Butter-Poached Lobster with Vanilla Sauce, Beef Tenderloin with Seared Foie Gras. Cost is $65; $80 with wines. Call 949-2526.

Winez & Grindz: Chef de Partie Laura Fong pays tribute to the mushroom in a five-course meal, 5 to 9 p.m. Friday, Pineapple Room, Liberty House Ala Moana. The menu includes Crispy Shrimp and Portobello Mushroom Purse, Chicken and Shiitake Won Ton, Petite Filet on Truffled Risotto with Wild Mushroom Ragout. Cost is $49; $64 with wine pairings. SPECIAL ATTENTION

"The Best Of," a Food Network program that travels in search of culinary pleasures in scenic locales, spent the week on three neighbor islands.

Host Jill Cordes shot segments on Molokai, Lanai and Maui. Featured restaurants: Tentalow Dining Room, Kapua Village, and Maunaloa Room, Molokai Ranch & Lodge, both on Molokai; Koele Lodge and Hulopo'e Court, Manele Bay Hotel, both on Lanai; Seasons at the Four Seasons Resort, Old Lahaina Lu'au and Hali'imaile General Store, all on Maui.

The segments will air as part of the daily half-hour show, as well as in two hourlong "The Best Of" specials.
