Easy to make for holiday snacking is this
combination of cereal, pretzels, ranch
dressing mix and Parmesan.

Chex Party Mix is one of those infinitely flexible recipes. Basically, you use 9 cups of any combination of Chex cereals -- rice, corn, wheat, etc. In fact, Chex isn't even essential. Use Life, Cheerios, Honeycomb ... mix and match textures and sweetnesses.

Add pretzels and/or nuts if you like them and top with a variety of coatings. Some formulas don't even require baking; you just shake everything up in a bag.

As a homemade party snack or gift, it doesn't get much easier, a point not lost on recipe-requester Clarice. "With the holiday season approaching soon, these would be wonderful additions to add to the holiday flair," she wrote.

Clarice asked specifically for recipes for peanut butter and furikake mixes. The General Mills folks were able to provide a peanut butter and jelly recipe, which is adapted here, sans jelly. For the furikake mix, we turn to a local cookbook. Also here is a ranch mix, sought by my daughter, Christine, who tested the recipe and pronounced it "very good." Must have been; it's all gone now.

Furikake Snack Mix

Adapted from "Garden of Flowers" (Playmate Kindergarten, 1999)

9 cups Rice Chex
2 tablespoons soy sauce
2 tablespoons water
1/2 cup sugar
12 drops red chile-pepper sauce
1 jar (1.7 ounces) nori fumi furikake

Pour cereal into a large pan. Set aside.

Combine soy sauce, sugar and hot sauce. Mix well and drizzle 1 tablespoon at a time over cereal, tossing well between each addition. Sprinkle with furikake and toss again to evenly distribute furikake.

Bake in a 9-by-13-inch pan at 250 degrees for 70 minutes, until mixture is crispy. Every 10 minutes, remove pan from the oven and stir mixture well, scraping the bottom to prevent sticking. Cool. Makes 9 cups.

Approximate nutritional information, per serving: 80 calories, 0.5 g total fat, no saturated fat or cholesterol, 300 mg sodium, 1.5 g protein, 18 g carbohydrate.*

Peanut Butter Snack Mix

Adapted from General Mills

3 cups Corn Chex cereal
3 cups Rice Chex cereal
3 cups Cheerios cereal
1 cup pretzel sticks or twists
1/2 cup peanut butter
1 tablespoon margarine or butter (do not use spread or tub products)
1/2 cup honey-roasted peanuts or honey-roasted macadamia-nut halves
> Mix cereals and pretzels in large bowl; set aside.

Place peanut butter and margarine in a glass dish and microwave on high, 30 seconds. Stir and microwave 30 seconds more, until melted and slightly bubbly.

Pour over cereal mixture, stirring until evenly coated. Spread in ungreased 13-by-9-inch pan and bake at 350 degrees for 5 minutes. Stir mixture and return to oven for another 3-5 minutes.

Remove from oven and stir in nuts. Cool and store in airtight container. Makes 10-1/2 cups snack mix.

Approximate nutritional information, per 1/2 cup: 120 calories, 6 g total fat, 1.5 g saturated,fat no cholesterol, 200 mg sodium, 3.5 g protein, 14 g carbohydrate.*

Savory Ranch Chex Mix

9 cups Chex cereal (corn, rice, wheat or any combination)
2 cups small pretzel twists
3 tablespoons margarine or butter, melted (do not use spread or tub products)
1 package (1 ounce) dry ranch dressing mix
1/2 cup grated Parmesan cheese

Mix cereal, pretzel twists and crackers in large resealable plastic food-storage bag.

Add remaining ingredients and seal bag. Shake until well mixed. 13 cups snack.

Approximate nutritional information, per 1/2 cup: 110 calories, 4 g fat, 1.5 g saturated fat, 5 mg cholesterol, 480 mg sodium, 15 g carbohydrate, 3 g protein. *
