Guest cook on this month's "Electric Kitchen" shows is Herbert Kealoha Hoe of 'Ai Pono, a health and wellness project for native Hawaiians.

The Hawaiian Electric Co.'s cooking show airs at 9:30 a.m. Sundays, 8:30 p.m. Mondays, 5 p.m. Tuesdays and 6 p.m. Thursday on Oceanic Cable Channel 16. It also airs on Maui at 8:30 p.m. Thursdays on Calabash Channel 44 (52 in Lahaina).

One of Hoe's recipes:

Lina Lina Luau Moa

1 lb luau leaves
5 cups water
1 lb boneless, skinless chicken pieces, thinly sliced
1 cup instant non-fat dry milk
2 tablespoons flour
2 tablespoons water
Toasted coconut flakes

Bullet Crepes:
1-1/2 cups water
1 cup whole wheat flour
2 egg whites

To make crepes: Combine ingredients and mix until smooth. Heat a 6-inch, heavy non-stick skillet. Spray with non-stick baking spray. Pour about 1/4 cup of batter into the skillet. Cook each crepe until lightly browned on both sides.

To prepare chicken: Place luau leaves in a pot with 3 cups of water; cook for 45 minutes. Drain and return to saucepan.

In another pot, saute chicken; add the remaining 2 cups water and instant milk. Bring to a boil; lower heat and cook until chicken is done. Remove chicken and add to luau leaves along with 1/2 of the liquid from the chicken pot.

Cook until liquid evaporates. Combine the flour with the 2 tablespoons water; add to remaining milk mixture and cook, stirring constantly, until mixture thickens.

To serve: Place about 1/3 cup chicken-luau mixture in center of each crepe and roll. Top with cream sauce and garnish with coconut flakes. Serves 8 to 10.

Bullet "Island Seasons Celebrate Fall": Russell Siu of 3660 on the Rise will present a cooking demonstration at noon Saturday in the fourth-floor kitchen of Liberty House Ala Moana. He will prepare Pan-Fried Scallops with Mesclun Greens and Lilikoi Vinaigrette. Tickets are $10 and guarantee a seat and sampling (ticket price may be credited toward a purchase of $25 or more in the store's Home section). Others may stand and observe for free. Bullet "The Therapeutic Value of a Vegetarian Diet": Physician and author Arthur Brownstein will speak at the Vegetarian Society of Hawaii's meeting. The free lecture will be held at 7 p.m. Sept. 13 at the Ala Wai Golf Course Club House. Call 944-8344.

Bullet "Royal Holiday Party": Chef Tom Wong of The Royal Hawaiian Hotel will demonstrate how to set up a Royal Cocktail Reception, 6 to 8 p.m. Sept. 14. Attendees will learn to pair wines with various dishes. Cost is $75; or $50 each for a party of two. Call 931-8404.

Bullet Tequila pairing dinner: Compadres Bar & Grill in Ward Centre will feature dishes prepared with tequila and served with specially paired tequila drinks, 6:30 p.m. Sept. 14. The menu includes an appetizer of pork albondigas, entree of chicken breast with chipotle-Cuervo 1800 sauce and dessert of flan with macadamia nuts and mango puree. The drinks include fruit-infused margarita cocktails, Cuervo Anejo with Sangria and a shot of Chinaco Anejo served with dessert. Cost is $48. The dinner is part of Compadres' Tequila Festival, which continues through Sept. 16. Call 591-8307.
