‘Fit to Fight’ food

Army food is featured in Hawaiian Electric's "Electric Kitchen: installments airing through May. Sgt. First Class Jimelyn E. Neal demonstrates dishes off the "Fit to Fight" menu. The show airs at 9:30 a.m. Sundays, 8:30 p.m. Mondays, 5 p.m. Tuesdays and 6 p.m. Thursdays on Oceanic Cable Channel 16; and at 8:30 p.m. Thursdays, on Calabash, Channel 44, Maui.

If you'd like to cook along, here's one of the featured recipes:

Ragout of Summer Vegetables

2 14-1/2 ounce cans chicken broth
3 shallots, minced
1/4 cup butter or margarine
1 pound baby green beans
2 cups diced zucchini
2 cups diced yellow squash
1/2 teaspoon fresh ground pepper
1/4 cup chopped parsley
Bring broth to a boil, then reduce heat and simmer, uncovered, 30 minutes or until broth is reduced to 1/3 cup.

Saute shallots in butter until tender. Add reduced broth and beans; cover and cook 3-5 minutes. Add zucchini, squash and pepper; cover and cook a few more minutes. Sprinkle with parsley. Serve immediately. Serves 8.

Young chefs in the spotlight

Two award-winning young chefs will show off their skills in a cooking demonstration Saturday at Liberty House Ala Moana.

Palmer Tanaka, 11, and Luke Myers, 15, were winners in their age groups in the Pillsbury Kids Bake-Off in March. The competition required them to cook up a dish in an hour using at least one ingredient from the Pillsbury family of products.

Palmer prepared a seafood soup while Luke made an Apple Danish Braid.

Steven Ariel and Mark Okumura, chef and pastry chef, respectively, at the Pineapple Room in Liberty House, will host the demo, scheduled for noon in the fourth-floor kitchen.

Zagat diners like
the neighbor isles

The neighbor islands are a great place for a good meal, according to the new Zagat restaurant guide to Hawaii's top eateries.

Of the Top 20 restaurants, 14 are on the neighbor islands.

Zagat guides are issued throughout the nation, containing rankings by local residents. In Hawaii, more than 1,600 contributed to the survey.

Restaurants are ranked on a 0-30 scale for their food, decor and service, with 0 being poor and 30 representing perfection. Typical costs are also listed; average cost of a restaurant meal in Hawaii, the survey found, was a reasonable $25.19.

Save your skin

In support of May as National Skin Cancer Awareness Month, events are planned as follows:

Friday -- Free skin cancer screenings are being offered at the Mama Lau Cancer Center on St. Francis Medical Center's Liliha campus, 2230 Liliha St., 12:30 to 3 p.m. Appointments are being taken at 547-6798.

May 28 -- "Avoiding Skin Cancer in Hawaii" is the theme of the Hawaii Skin Cancer Coalition's Health Fair at Windward Mall, 11 a.m. to 3 p.m. Participants will be able to look beyond their tans to underlying skin damage with the help of a skin scanner, test their favorite sunglasses under a UV meter and on a first-come, limited basis, get skin cancer screenings. Call the mall at 235-1143 for more information.

If you can't make it to either event, St. Francis Medical Center offers these summer tips:

Bullet Avoid the outdoors between 10 a.m. and 4 p.m. when the sun's rays are the strongest.
Bullet Cover up with clothing to protect your skin and wear a hat.
Bullet Use a sunscreen with an SPF of 15 or higher.
Bullet Have any unusual blemish, especially a mole or marking that is new or one that changes in size, color or shape, checked by a health-care professional.
