For 100 years, Child & Family Service has been looking out for Hawaii's needy.

The group, founded in 1899 as Associated Charities, celebrates with the publication of a cookbook, "Flavors of Hawaii," designed to pay tribute to the islands' cultural diversity as it shows itself in food.

Recipes are the tested favorites of the CFS Guild. The book is very nicely organized and includes not only an index, but an individual table of contents for each section, from pupu to desserts.

The final chapter comprises contributions from professional chefs such as Sam Choy, David Paul Johnson and Russell Siu.

The first printing, of 10,000 copies, is in kitchen and book stores now, as well as other outlets such as Longs Drug Stores. List price is $19.99 (in honor of the centennial year, 1999). Or order by calling 543-8441.

Proceeds benefit the private, non-profit agency's programs, which include emergency shelters, youth residential programs, transitional apartments and adoption services.

Marinated Shrimp

"Flavors of Hawaii," Child and Family Service
Guild, Wimmer Co., 1998

1 clove garlic
1 cup extra virgin olive oil
2/3 cup rice vinegar
Juice of 1 lemon
2 teaspoons dried oregano
1/2 teaspoon red pepper flakes
1 teaspoon salt
2 pounds medium shrimp, shelled and cooked
1 Maui onion, thinly sliced
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced

Mash garlic and place in olive oil for 1-6 hours. Discard garlic.

Combine vinegar, lemon juice, oregano, pepper flakes and salt. Mix well. Whisk in olive oil.

Toss shrimp, onion and bell peppers together with sauce. Refrigerate 2 hours.

May be served as an appetizer or over greens as an entree. Serves 12-15 as an appetizer.

Gourmet cookies in the bag

There's more to grab bags than a four-pack of toilet paper and LifeSavers books. If you're looking for some options, we'll give you one every day this week.

Cosmic Candy, that place where you fill up on scoops of candy sold by the quarter-pound, has entered a new universe. A new division, Hurricane Hut, has opened in a 150-square-foot kiosk in the Makai Market of Ala Moana Center, selling made-in-Hawaii treats.

Like Cosmic Candy, Hurricane Hut sells Hawaiian Hurricane popcorn, fresh and microwave styles. But the outlet's new focus is on upscale items in classy packaging -- like Hawaii Gourmet Cookies in such flavors as mango, green tea and Kona coffee.

A 4-ounce bag of individually wrapped cookies sells for $5.95. There's also White Chocolate Macadamia Nut Toffee, which is absolutely to die for. This goes for $3.95 for a small bag or $12.95 for an 8-ounce gift box.

Shizu cooks with new chef

Royal Garden at Waikiki's newly reopened restaurant Shizu welcomes Chef Akito Yoshioka and his fresh creations. Yoshioka comes from Japan where he was the chef for Fumine, Shizu's sister restaurant in the Ginza district of Tokyo. He brings to the restaurant complete meals consisting of sashimi, tempura, grilled salmon, grilled mackerel, pork cutlet or chicken teriyaki; noodle dishes including Tenzaru Soba, Kitsune Udon, Nabeyaki Udon and Tempura Udon; and a teppanyaki room where he prepares meals directly in front of the diners.

The restaurant is on the fourth floor of the hotel and is open for lunch daily, except Sundays, and dinner Monday through Friday. Free valet parking is available. For reservations, call 943-0202.

Bullet Rising memories: Write a story, share a recipe or have a child draw a picture for Wheat Food Council's "Bread: Memories and Traditions of a Lifetime" contest. The council will publish the winners in its upcoming booklet showcasing bread as the center of family traditions and meals.

Entries can be entered into one of three categories -- Favorite Recipes, Stories of a Lifetime and Bread Drawings. The drawings category is open to people up to age 17 and the other two categories is open to people 18 and older. Only one entry per category is allowed per person and winners will receive $350-$2,000. Winners of the drawing category will receive their prizes in a savings bond.
