Natural baking

Natural yeast and organic breads, Japanese-style, come to Hawaii with the opening of Sunshine bakery Sunday.

Head baker and production manager Chieko Nakamoto of Tokyo trained with Dr. Mitsuo Hirose, a consultant with the Tokyo Baking Association who revived a traditional style of baking from the days before processed flour.

Natural yeast, organic baking emphasizes unprocessed, natural cooking and is a growing trend in Japan. Nakamoto plans to introduce these breads and other familiar Japanese specialties, adapted to Hawaii tastes.

The bakery, at 2570 S. Beretania St. near University Avenue, will celebrate its grand opening from noon to 5 p.m., with samples and entertainment. Call 942-3120.

bullet Coffee Manoa: Celebrate National Specialty Coffee Week with coffees from Columbia, Brazil, Guatemala, Mexico, Costa Rica, Kenya and Hawaii.
