Meet the Food Network chefs: David Rosengarten, Jacques Pepin, Curtis Aikens, Mary Sue Miliken and Susan Feniger are filming two one-hour Food Network specials in Hawaii. Kudos: Grace S. Kusuhara, baker at the University Laboratory School,was one of the winners in The Peanut Institute's "Peanutty Creations Contest" held in July in Anaheim, Calif. Kusuhara combined peanut butter, tofu, banana and strawberries to create "P-Nut Butter Tulips."
P-nut butter tulips
1/2 cup tofu, softSpray wrappers with oil. Place one on another, with corners offset, and fit each pair in a muffin tin. Spray again. Bake at 350 degrees 5 minutes, or until golden brown. Cool.
1/2 cup mashed potatoes
3 tablespoons sugar
1/4 teaspoon salt
3 tablespoons creamy peanut butter
1/2 teaspoon vanilla extract
1 banana, sliced
4 strawberries, sliced
8 lumpia wrappers
Mix tofu, potato, sugar, salt, peanut butter and vanilla in blender until smooth.
Put 1/4 cup of mixture in each shell. Top with alternating banana and strawberry slices. Makes 4 servings.
