Neiman Marcus cooks up
a new chef

Douglas Lum is executive chef for the three food services at the Neiman Marcus Hawaii store that is set to open Sept. 18 in the Ala Moana Shopping Center. The food services include 240-seat Mariposa restaurant, the Mermaid Bar and Espresso Bar.

"We're trying to rekindle the aloha spirit into restaurants," Lum said. "The Mariposa is named after one of the three cruise ships which came to the islands. We're going to have a laid-back decor and a great vantage point for sunsets."

He most recently was chef at Beverly Gannon's Joe's Bar and Grill at Wailea, Maui. Lum also worked for six years at Sunset Grill at Honolulu's Restaurant Row.

During nearly 10 years in California, Lum worked at the Sheraton Palace Hotel in San Diego, Hornblower Luxury Dining Yachts Inc. in San Francisco, San Diego and Los Angeles, and George's at the Cove in La Jolla.
