‘Cuisines of Sun’
a global experience

Dishes from all over the world will be available this weekend "Cuisines of the Sun" at the Mauna Lani Bay Hotel in Hawaii. Sample morsels that are "Out of Africa" while listening to the beat, of the drums, 7:30-9:30 p.m. Saturday on the hotel's Kekaha Lawn. There also will be breads, wine and beer by Sam Choy's Brews.

Sunday brings several native cuisines. "Cut Up, Caribbean-Style," 9-10 a.m. in the ballroom with the James Beard Foundation's 1997 "Best Chef of the Southeast" winner Norman Van Aken. Aken will lead a hands-on workshop teaching participants how to bring the Caribbean to their kitchens.

Following Aken's presentation, Andrew Fielke will take attendees down under in his "Beating Around the Bush" cooking class, 10:30 a.m.-noon in the ballroom.

Then, "go native" with Chefs Loretta Barrett Oden of Santa Fe's Corn Dance Cafe; Food & Wine's "Best New Chefs" of 1997 Raphael Lunetta and Josiah Cilrin; and Fielke in a "wild walkabout," 7-9 p.m. on the Oceanside Lawn.

If you're "In the Mood for Soul Food," Monday is the day for you. From 10-11:30 a.m. munch on yummies prepared by Monique King and her pastry chef Lynn Buzza. King's restaurant "Soul Kitchen" was named "best new Chicago restaurant" in Bon Appetit.

Wine lovers will enjoy "Secrets From the Cellar," 5:30-6:30 p.m. in the ballroom with Food & Wine's "Best New Chef" Mark Peel preparing items to complement each glass.

Tuesday and next Wednesday has chefs teaming up and improvising meals to "beat the clock," a drink contest, another "walk on the wild side" and a culinary expedition.

The week-long event costs $850 per person for all events or $650 for hotel guests who want to attend five evening receptions, brunch and dinner. For information call 1-888-424-1977. Reservations required.

bullet Party with the mangoes: Ka'u Outdoor Circle's fourth annual Ka'u Mango Festival will be held noon Sunday at the Pahala Community Center on Hawaii. Enjoy jam, pies, chutney, ice cream, sorbets and other mango yummies while walking through a grove of 108 mango trees. There also will be face painting, a "Green Thumb Booth" with plants, flowers, vegetables, arts and crafts, environment educational materials, plate lunches and more.
