Dig it—here’s how
to make an imu

Have a luau this summer the old-fashioned way, with a traditional imu.

All you need is a pit, some rocks, some wood and, of course, a pig.

That is a Maui Community College site with step-by-step instructions for preparing an imu.

The pictures come from the commercial Old Lahaina Luau, held every night on Maui. Follow the instructions, and you may become the most popular person in the neighborhood.
