Ahi Nicoise is a light entree.
Fish-lovers rejoice. Fresh island tombo ahi is a best buy this week at $4.99 a pound at Star and $5.49 for Safeway Club members. At Foodland, ahi fillets are $5.99 a pound. Tombo ahi is the
catch of the weekAnd you don't need a lot of fish for a meal-sized salad.
Nicoise salad with ahi
3/4 pound tombo filletLine a serving platter with lettuce leaves. Arrange beans, potatoes, carrot, cucumber and tomatoes on the leaves.
2 tablespoon vegetable oil
Salad:
1 small head romaine lettuce
1/2 pound blanched green beans, cut into 2-inch lengths
3 new potatoes, cooked and sliced
1 large carrot, peeled and julienned
1 small cucumber, sliced
1 tomato, cut into wedges
2 anchovy fillets
2 eggs, hard cooked and sliced in half

Capers
Dressing:
1/4 cup red wine vinegar
1 teaspoon Dijon-style mustard
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup olive oilCut fillet into cubes or thin slices. Lightly saute the fish in the vegetable oil and place in the center of the salad.
For dressing, combine ingredients in a jar or container with a tight lid and shake until blended.
Top salad with anchovies; garnish with eggs, olives and capers. Pour dressing over all. Serves 4.
