Taking the reins at Palomino

After 16 years in the restaurant business, Mitch Dettloff takes charge of the Palomino Euro Bistro at Harbor Court across Nimitz Highway from Aloha Tower.

It is part of a chain of six restaurants in the United States. The parent company, Restaurants Unlimited of Seattle, also owns Ryan's Grill and Kincaid's Fish Chop & Steak House in Honolulu.

"We're on a growth curve and the concept that we want to grow with is Palomino," Dettloff said.

In the next year, Palominos will open in Dallas, Denver, La Jolla, Calif. and Charlotte, N.C. Dettloff said a Maui Palomino is also possible in the future.

He comes from Ryan's Grill in Ward Centre, where he has been general manager since 1993.

Dettloff also has worked in California for Ritz Carlton, Embassy Suites, Doubletree Hotel and Restaurants Enterprises Group.
