Chile weather

Warm your home on a chilly day with Chile Relleno Spring Rolls. Ken Martinez, co-owner of It's Chili in Hawaii, gives a demonstration of the spring rolls and three other recipes on "The Electric Kitchen," airing at noon tomorrow on KIKU-TV.

Chile Relleno Spring Rolls

2 pounds lean ground beef, pork or chicken breast
2 Maui onions, chopped
1 bunch green onions, chopped
2 cloves garlic, minced
1 teaspoon ground cumin
Salt and pepper to taste
2 pounds frozen, chopped roasted green chiles, thawed
1 teaspoon fresh oregano leaves, chopped
2 large potatoes, cubed
4 cups cheddar or jack cheese, shredded
2 16-ounce package of egg roll wrappers
Salad oil for frying
Hoisin sauce or salsa, optional

In saucepan, brown meat; drain excess oil. Add onions, garlic, cumin, salt and pepper. Cook, stirring frequently, until onions are golden brown. Add green chiles; cook for 2 minutes.

Add oregano and potatoes. Cook until potatoes are done. Remove from heat and add cheese, stirring until cheese melts. Cool mixture to room temperature.

To make rolls, place 2 tablespoons of meat mixture in center of a wrapper. Fold lower corner of wrapper over mixture, tucking point under mixture. Fold left and right corners toward center to seal and continue rolling lower edge, sealing edges with water.

Deep-fry until golden brown. Serve with hoisin sauce or salsa. Makes 16 servings.

Approximate nutritional analysis per serving with lean beef (cooked in soybean oil with excess oil drained): 460 calories, 20 grams fat, 9 grams saturated fat, 60 milligrams cholesterol, 480 milligrams sodium. With lean pork: 440 calories, 19 grams fat, 8 grams saturated fat, 60 milligrams cholesterol, 470 milligrams sodium. With chicken: 390 calories, 11 grams fat, 5 grams saturated fat, 50 milligrams cholesterol, 470 milligrams sodium.*
