Hawaiian Air takes off: Something new's in the Hawaiian Air. Hawaii's "flagship airline" introduces "the Best of Hawaii" menus Jan. 1 on mainland and international flights. The program showcases a different island and menus from a respective hotel executive chef each quarter in 1997.

The first quarter features Oahu and Hilton Hawaiian Village cuisine, followed by the Big Island and Hapuna Beach Prince Hotel menus; Maui and Kea Lani Hotel cuisine; and Kauai and Sheraton Princeville Hotel menus.

Specialties of Hilton Hawaiian Village chef Jean-Luc Voegele and the Bali restaurant include fresh lobster tartare, herb-crusted rack of lamb, Asian ratatouille, yam gaufrettes and thyme jus. Sky Chef will execute the various dishes on flights.

Saturday at biergarten: Sample dark-wheat Dunkel Weizen beer on half-hour tour/tastings, noon Saturdays, Gordon Biersch Brewery Restaurant, Aloha Tower MarketPlace; free. Reserve at 599-4877.

Roy among all-stars: Tune into the "New American Cuisine" TV series featuring isle chef/restaurateur Roy Yamaguchi and 20 other acclaimed chefs, 3 p.m. Sundays from Jan. 5, KHET. Also featured are Mark Miller of Coyote Cafe, Santa Fe, N.M., and Red Sage, Washington, D.C.; Anne Rosenzweig of Arcadia and the Lobster Club, Manhattan, N.Y.; Charlie Trotter of Charlie Trotter's, Chicago; and Alice Waters of Chez Panisse, Berkeley, Calif.

Heads-up on Valentine's: For a fashionably late holiday gift or stress-free early Valentine, consider tickets for Fantasies in Chocolate, scheduled noon to 3 p.m. Feb. 23 at Hilton Hawaiian Village's South Pacific Ballroom; $25 for two-hour tasting or $55 for brunch and tasting. Call 946-2187, Ext. 213. The event offers chocolate delicacies from isle bakeries, restaurants, hotels and specialty shops. Guest is Alice Medrich, author of "Chocolate and Low-Fat Desserts" and "Cocolat - Extraordinary Chocolate Desserts" and winner of a James Beard cookbook of the year award.
