The Rock Cornish hen, or Rock Cornish game hen, is a hybrid of English Cornish game cocks and white Plymouth Rock chickens.
The tender birds have little fat and maximum white meat. They take to bastings, sauces and marinades, such as this Indian styling.
Indian Game Hens
2 large cloves garlicMachine puree garlic, onion and ginger. Add yogurt, spices, Worcestershire sauce, juices and paprika and process just to blend.
1 small onion, quartered
1-1/4 inch slice fresh ginger
2 cups nonfat yogurt
1/2 teaspoon ground coriander
1/2 teaspoon cumin
1 tablespoon Worcestershire sauce
1/4 cup lime or lemon juice
1/4 cup orange juice
1 teaspoon paprika
4 Cornish hens (each 1 pound), halved, skinned and fat removed.Score hens' breasts and legs with a knife. Marinate hens in yogurt mixture in refrigerator a few hours or overnight.
Remove birds from marinade; discard marinade. Grill or broil hens 15 minutes on each side or until brown. Serve immediately. Makes 8 servings, 1/2 hen each.
