He replaces Kelly Degala, who moved to California to become executive chef for the entire chain.
Kong has been executive sous chef at Gordon Biersch in Hawaii for two years. He's spent 11 years in the food industry, including restaurants in Fort Collins, Colo.; Napa Valley, Calif. and the Four Seasons Resort in Newport Beach, Calif.
He is a Punahou School graduate who attended Colorado State University and graduated with honors from the California Culinary Academy in San Francisco.
