And the deal of the week has to be 10 pounds of Russett potatoes from Washington, for $1.77. What to do with those potatoes? Here's a recipe for four of them, at least:
4 (10-ounce each) potatoesPrick potatoes with tines of fork; microwave on HIGH about 18 minutes or until fork-tender.
3/4 pound ground turkey
1 medium onion, chopped
1 medium green bell pepper, diced
1 cup sliced mushrooms
1 14- or 15-ounce jar or can marinara or other vegetarian spaghetti sauce
Salt and pepper
1/4 cup chopped parsley
1/4 cup grated Parmesan cheese
Meanwhile, in large nonstick skillet, saute turkey about 6 minutes until no longer pink. Add onion, bell pepper and mushrooms; saute, stirring 3 minutes.
Stir in marinara sauce, reduce heat, cover and simmer 10 minutes. Season with salt and pepper. Stir in parsley.
Place potatoes on plate; split and fluff. Top potatoes with turkey mixture and cheese. Makes 4 servings.
