Continental enlists help
of isle chef

Roy Yamaguchi develops meals for
the airline's Pacific flights

Continental Airlines' top-paying passengers will be dining on meals developed by Hawaii chef and restaurateur Roy Yamaguchi beginning Sunday.

The meals will be offered in what the airline calls its BusinessFirst class in both directions of Continental's Honolulu-West Coast routes and on Continental Micronesia's Honolulu-Tokyo and Honolulu-Guam flights.

Yamaguchi, who is known for the Roy's restaurants on Oahu, Maui, Kauai and the Big Island and in California, Guam, Japan, Hong Kong and the Philippines, said he has picked six dishes for the airline's menu. "I've come up with a menu that I think could be duplicated on the outside and prepared by the three different food services companies (that produce Continental's meals)." He said he has demonstrated the dishes in the kitchens where Continental's meals are made.

"The partnership is very good," he said. "We can learn from each other." He said changes may need to be made as experience is gained. "We're not afraid to take the challenge."

Yamaguchi's involvement is part of the airline's celebrity chefs program in which chefs prepare special menus for flights not only in their own geographic area but for Continental's worldwide system.
