Island eggs are a bargain this week.



Eggs, fish, tomatoes
make bargain meals

Fresh island eggs top this week's best buys at 89 cents for a dozen medium at Daiei.

Other best buys include fresh ahi tombo fillet at $2.98 a pound at Foodland; fresh Silver Brite salmon roast at $1.89 a pound at Star; and tomatoes at 59 and 68 cents a pound at IGH (Independent Grocers of Hawaii) stores and Daiei, respectively.

Oahu wholesale importer Linda Moriarty asked for easy menus based on weekly best buys.

Suggested menus are:

Sauteed and grilled ahi tombo Monday and Thursday.

Curried eggs, frittata and brunch quiche Tuesday, Friday and Sunday.

Sauteed salmon with capers, and grilled miso salmon Wednesday and Saturday.



Grilled fresh tomatoes (with grilled salmon) and fresh tomato marinara over pasta Saturday and Sunday.

Try a simple, low-fat recipe:


No-Crust Broccoli Quiche

1-3/4 cups broccoli flowerets
2 tablespoons chopped onion
1 slice deli ham, chopped
1 cup shredded low-fat Swiss cheese
1 tablespoon flour
3 egg whites and 1/2 cup egg substitute (or 4 whole medium eggs)
1 cup evaporated skim milk
Dash salt and pepper
1/2 teaspoon dry mustard
1 tablespoon chopped pimento

Spray 9-inch glass pie pan with vegetable spray. Place broccoli and onion in pan, cover with plastic wrap and microwave on high 2 minutes; drain. Sprinkle ham and cheese on broccoli. Whisk together remaining ingredients; pour over broccoli. Bake at 350 degrees 35 minutes. Makes 4 servings.
