Herb-Marinated Shrimp is a delight for the Independence Day holiday.



The big holiday calls for
a little shrimp

It's midsummer and time to throw some shrimp on the barbee.

Black Tiger shrimp is a July 4 best buy at about $8 per pound of large size (21 to 25 shrimps per pound) at Daiei and Star - sold in two- and four-pound packages at the respective markets.

The frozen or thawed "tigers" also sell at about $42 for four pounds of extra-large size (16-20 - $10.49 per pound) at Times Super Market; $35 for four pounds of large size ($8.75 per pound - or about $9 per single pound) at Safeway; and $7.98 per pound 31-40 size at Daiei.

Here's an easy, tasty and healthful recipe for shrimp on the barbee.


Grilled Herb-Marinated Shrimp

(From James McNair's "Grill Cookbook," $10.95)

2 pounds medium-size to large shrimp, in the shell

Marinade

1 cup olive oil
2 tablespoons freshly squeezed lemon juice or white wine vinegar
1/4 cup minced fresh herbs such as flat-leaf parsley, oregano, thyme or rosemary, alone or in combination
2 teaspoons minced or pressed garlic
Salt and freshly ground pepper to taste
3 pinches cayenne pepper

Combine marinade ingredients in a resealable plastic bag and marinate shrimp 3 hours in refrigerator. Place shrimp on a wire mesh screen on a hot grill, and cook for a total of 6 to 8 minutes, flipping shrimp once. Shrimp is ready when shells turn bright pink and meat is just opaque. Serve plain or with preferred dipping sauce.

Makes 8 appetizer or 4 main-course servings.
