Here's an easy, tasty and healthful recipe for shrimp on the barbee.
2 pounds medium-size to large shrimp, in the shell
1 cup olive oilCombine marinade ingredients in a resealable plastic bag and marinate shrimp 3 hours in refrigerator. Place shrimp on a wire mesh screen on a hot grill, and cook for a total of 6 to 8 minutes, flipping shrimp once. Shrimp is ready when shells turn bright pink and meat is just opaque. Serve plain or with preferred dipping sauce.
2 tablespoons freshly squeezed lemon juice or white wine vinegar
1/4 cup minced fresh herbs such as flat-leaf parsley, oregano, thyme or rosemary, alone or in combination
2 teaspoons minced or pressed garlic
Salt and freshly ground pepper to taste
3 pinches cayenne pepper
Makes 8 appetizer or 4 main-course servings.
