"The new restaurant is the Texas Rock 'N' Roll Sushi Bar. It's a Southwest-theme with a disco and karaoke," said Paul Tang, recently named hotel general manager. The restaurant will fill the former Trappers location.
Tang replaces Ed Crovo, who becomes general manager at the Hyatt Regency Maui. Tang comes to Waikiki from Chicago where he was general manager for five years at the Hyatt Regency O'Hare hotel. He also has worked as general manager at Hyatt hotels in Orlando, Fla.; Columbus, Ohio; and Seattle.
Tang earned his bachelor's degree in travel industry management at the University of Hawaii and master's degree in hotel management at Michigan State University.
