Lilikoi adds passion to dressing, marinade

Celebrate the first day of spring by grilling fresh island fish with the light tang of passion fruit. Start with Jean's Honey Mustard Macadamia Nut Oil Salad Dressing with Lilikoi, a new creation by award-winning chef Jean Hull of the Big Island. The lilikoi-laced dressing hit the stores, said Ann McCarty, owner of Island Cafe Kona Coffee & Gourmet Foods, which also bottles original and new tarragon flavors. The blends feature mac oil, macadamia honey and Dijon mustard. The dressings are about $9 per 12.7-ounce bottle on Oahu at Compleat Kitchen, Executive Chef, R. Field Wine Co., and Pat's Island Delights, and at various Big Island and Maui stores. McCarty's fish recipe follows.

Grilled Ono with Lilikoi Dipping Sauce

Mix salad dressing, soy sauce and wine. Marinate fish in mixture 15 to 20 minutes or longer. Grill fish 3 to 4 minutes on each side, reserving marinade. Add mayonnaise to reserved marinade; serve mixture on the side or spoon over fillets. Makes 4 servings. n Approximate nutritional analysis per serving: 561 calories, 4 grams fat, 98 milligrams sodium.
